Automatically Update The Inventory Policy for Product Variants

Here is a simple proof-of-concept workflow that will allow you to update the inventory policy for a particular variant in one of your workflows.

In this case, we are just setting a SKU and a policy value in a transform step:

And then we have a custom code step that is executing the GraphQL query to update the inventory policy.
