This workflow will allow you to automatically generate a collection of your newest products using tags along with the Automated Collections.
Once you install this workflow, it will start to tag your new products with a New Arrivals tag when they are created and then untag them after 30 days.
Then, you can create a collection using the Automated collection type with the condition Product tag is equal to New Arrivals:
