Will this cancel orders from real customers?

Only if their email address contains buyforme.amazon. Amazon uses that text in every Buy for Me order email, and ordinary customer addresses don't include it.

Why refund after cancelling?

Cancelling a Shopify order doesn't always release the payment on its own. Refunding each line item makes sure no money is captured from the order.

Can I still sell on Amazon?

Yes. This only affects orders Amazon's agent places on your Shopify store. Your own Amazon seller listings aren't touched.
