You'll need to create separate workflows for each app since each workflow requires a unique App ID. However, you can point multiple workflows to the same Google Sheets spreadsheet by using identical spreadsheet names during setup.
Will this capture uninstalls that happened before I set up the workflow?

It doesn't retrieve historical uninstall data from your Shopify Partner account, so start the workflow as soon as possible to avoid missing future uninstalls. If you need historical data records in your spreadsheet, you can run a Time Travel and target a broader date range to run a one-time workflow against.
